Spelt/Corn Salad


We went to a dinner party tonight and I wanted to make something totally vegan and tasty.

The spelt berries give the salad a chewy texture as all of the various flavors attack your taste buds.




2 cups spelt berries, cooked until soft
1 cup corn kernels
1/2 cup pumpkin seeds
1 pint cherry tomatoes
1 bunch spring onions
Small handful cilantro
2 avocados
2 tbs smoked paprika
1 tbs sumac
olive oil to taste
1/4 cup lime juice

Mix all ingredients together cold and let sit for at least 2 hours.

Serve as a salad or on tortilla with pomegranate seeds and sriracha sauce.
